Herb Pasta Dough Preparation -
Place in a towel
½ cup minced strong herbs (sage, rosemary, thyme, oregano, or marjoram)
or 1½ cups minced mild herbs (basil, chives, parsley, or scallions)
Squeeze well to extract the moisture. Add the herbs to the flour with the eggs to make dough.
