Kiwi Shrimp Salad Recipe

Kiwi also known as Chinese gooseberries, Kiwis come from California and New Zealand and are available year-round.
This straightforward tropical salad is flavorful, tangy, cool, and nutritious. It is ideal for your 7-day soup diet or for living a clean lifestyle. Shrimp can be served whole or in bite-sized pieces. Placing boiling shrimp into very cold water helps to make them more delicate and gives them a lovely pink tint.

prepare:


Step 1-  Vinaigrette, using lemon and fresh mint (separate)

Step 2-  cook in a large saucepan over medium-high heat, stirring, until toasted and golden, about 3 minutes.
             1 cup whole buckwheat or quinoa (separate)

Step 3- Stir in:
             2 cups boiling chicken stock or broth or water
            1/2 teaspoon salt

Step 4- Cook over low heat, covered, until the liquid is absorbed, about 15 minutes. let stand, covered, for 5 minutes. (separate)

Step 5- Combine in a large bowl;
             4 kiwis, peeled and sliced
             1bunch radish, sliced
             1 bunch of scallions, sliced
             8 ounces large shrimp, cooked, peeled and deveined.

Step 6- Toss with 1/2 cup of vinaigrette. Arrange the buckwheat, kiwi mixture, and;

             1 head of butter lettuce, torn into bite-size pieces on a large platter. Drizzle with the remaining vinaigrette.
